Details: Hidden Creek is a delightful 16-acre vineyard in a bushland setting overlooking the Severn River Valley and Girraween National Park. Specialising in Shiraz and Chardonnay, the winery features a caf with Mediterranean-style meals and espresso coffee where wine is also served by the glass. Contract winemaking undertaken on site.
Hidden Creek produces small quantities of high quality wines with regional and varietal integrity. Grapes from our vineyards are hand-pruned and hand-picked at optimum times.
Our winemaker handles small batches using traditional methods. Modern equipment and premium imported oak barrels ensure consistent high quality.
At 900m above sea level, our vineyard runs along a north facing ridge. Seven hectares of vines have been planted in well drained decomposed granite soil, with the following varieties:-
Chardonnay - the most popular classic white grape variety, is renowned for the wines it produces in Burgundy, Chablis and the Champagne regions of France. Chardonnay does not have pronounced aromas and flavours, but does respond well to oak aging methods, skin contact and barrel fermentation in the winemaking process.
Semillon - a major classic white variety grown in the Bordeaux region of France. Semillon vines produce large bunches of big berries with thin skins, which result in a very distinctive wine style that ages well, developing butterscotch and honey flavours.
Verdelho - a white wine grape variety that originates in Portugal, where it is grown on the island of Madeira and in the Douro valley. Verdelho usually produces fortified wines, Madeira and white port, but can also produce table wines with a strong and attractive varietal character, pale in colour with high alcohol levels. Best complements Asian food styles.
Nebbiolo - a red grape variety from the Piedmont region of North-West Italy, where is it made Barolo and Barbaesco, two of Italy's premier red wines. The grapes yield full-bodied wines, high in acid and tannins, and are traditionally aged in large old oak barrels.
Cabernet Sauvignon - the premium red grape variety of Bordeaux in France. It has traditionally been used as the main component in the production of claret. Wines are typically high in tannins and acid and have a pronounced varietal flavour. Merlot is often blended with it to make a softer wine suited to earlier drinking.
Merlot - the most planted classic red variety in the Bordeaux region of France. Related to Cabernet Sauvignon, but ripens earlier with higher yields of a softer less tannic fruiter wine. Capable of producing top quality wine such as Petrus from the St Emilion area North-East of Bordeaux.
Muscat - different varieties are used as table fruit and for winemaking. The Muscat vines at Hidden Creek were planted in the 1950s and produce dark fruit of great flavour intensity. The wine is fortified and has rich muscat characters, redolent of aromatic muscatels at Christmas time.
Shiraz - the oldest known of the classic red varieties, and known as Syrah in France and the United States. In cool climates the wine produced from Shiraz is characterised by a rich berry/plum aroma with spicy/peppery flavours.
